Peach salsa is delicious as a dip or over fish. Peaches contain phytonutrients, antioxidants and carotenoids that are important in maintaining health.
Ingredients:
3 Peaches, diced
1 TBL fresh-squeezed lemon juice
2 Roma tomatoes, diced
6 green onions, sliced
1 jalapeno pepper, seeded and minced
1 TBL cilantro, chopped
2 TBL extra virgin olive oil
2 TBL sherry vinegar
1 TBL organic Agave nectar
Directions: Place peaches, cilantro, green onions, tomatoes and jalapenos in mixing bowl. Set aside larger bowl and mix everything together. Let sit for 10 minutes before serving.
