A Mexican twist on the traditional BLT with a special mayonnaise flavored with cocoa and ancho chili powder.
Ingredients
12 slices thick cut bacon
1/4 cup honey
2 tablespoons ancho chili powder
2 tablespoons fresh black pepper
2 tablespoons unsweetened cocoa powder
4 slices heirloom tomato
4 pieces of lettuce
4 tablespoons mayonnaise
2 tablespoons canned roasted green chiles
1 tablespoon fresh lime juice
8 slices bread
Method
Mix ancho powder, black pepper and cocoa then rub onto each piece of bacon. Cook until crispy, drizzling honey on bacon during last 1 minute of cooking. In a blender or food processor, pulse mayonnaise, lime and chiles. Toast bread, then spread mayonnaise on toast. Layer toast with bacon, lettuce and tomatoes.
